On Italian Cuisine

Italian cuisine has evolved through centuries of social and political changes, tracing its roots as far back as the 4th century B.C. Many important changes occurred with the discovery of the New World and the introduction of items such as potatoes, tomatoes, bell peppers, and corn, all now central to Italian cooking, but not introduced in quantity until the beginning of the 18th century.

One of the most important features of Italian cuisine is that its ingredients and dishes vary from region to region. Many dishes that were once regional, however, have proliferated with variations across the country and even internationally. Cheese and wine are a major part of the cuisine, many variations of which are controlled by law (known as Denominazione di origine controllata (DOC)). Coffee, specifically espresso, has become important in Italian cuisine. While the coffee bean is not grown in abundance in Italy, we may forgive the Italians for thinking that they made the espresso café into the international success story it is today.
